Polster recently had the opportunity to by out her famous recipe for ruga- lech in the "new" kitchen fa-" cility located in the Activities Room of Wexner Heritage House/After tasting her pastries, both Polster and Carol Hickman, activities therapist, felt that not only is the recipe exceptional, but the new kitchen adds an important ingredient — "ease of preparation." Polster has a reputation for being an outstanding baker. Most of her recipes have been it's not surprising that she was quite willing to share her rugalech recipe. Polster along with many of the residents of Wexenr Heri tage House have already experimented with''the new kosher kitchen and all the im-' proved conveniences that were especially designed for in her family for many years. Four years ago her grandchildren convinced her to put her recipes on computer so that her goodies could.be enjoyed for many generations to come. As a volunteer for many years with the Jewish Center, Hadassah, Council of Jewish Women, B'nai B'rith Women, Tifereth Israel Sisterhood and Heritage House, she has always been wining to give of herself to others. Therefore, ? Evelyn Polster'$ Rugalech Dough: I Mix together 3 cups flour (unsifted) and 1 package of dry yeast. Blend with pastry blender % lb. softened butter (one stick at a time). ; Separate 3 eggs. Set aside the whites for another project. Beat 3 yolks and mix in % pint sour cream (1 cup). . Blend beaten egg yolks and sour cream in to rest of mixture. Mix through and knead with hands until well mixed and spongy. Cover or wrap and refrigerate at least 8 hours before baking. Can keep up to one week. - . ' V, Fillings: 2 cups sugar 1 cup chopped walnuts 2 Tablespoons cinnamon Raisins Divide dough Into 6 parts. " Put a handful of above mixture on a cloth. Put a ball of dough down on the mixture so it won't stick to the cloth and roll it out with a rolling pin on top of mixture. For crescents — cut into 12 pie shape wedges. For pockets -r cut into rectangles or squares and roll like jelly roll. : . * Apricot filling — use pie filling available in can or apricot pre- ; serves and spread lightly on each piece. Cream cheese filling — cream cheese, egg yolk, IT. sugar, vanilla, few drops lemon juice, beat all ingredients until creamy. Raisins —put 2 or 3 raisins on each piece. , Can choose apricot, cream cheese, raisin or other fillings for inside; Sugar, walnuts and cinnamon mixture for outside. Grease cookie sheet. ,' . Bake in pre-heated oven at 350 degrees for 2fl minutes. Remove from oven and let sit 5 minutes before removing baked,' ..rugatech from cookie sheet. .■■'.. it. The kitchen, being located in the Activity Room, is a busy area. All kinds of activities are continually happening in this room: some people are cooking while others are painting, weaving, sewing and even gardening in the adjacent greenhouse. As noted by many, because the kitchen^ has double facilities more residents can cook and bake at the same time. Weekly, residents bake their favorite cookies, cakes and challahs with the assistance of volunteers from the Auxiliary. According to Gerald • N. Cohn, executive vice presi- • dent, the residents are truly enjoying all the features, not only in the new kitchen, but throughout the entire new fa- acuity at Wexner Heritage House. Daily, comments are made by the residents demonstrating how pleased they are with their new surroundings, he noted. "» Marcia Sanford is director of communications at WHH.
